Probably the classic American restaurant Paris has been waiting for –BIEH (Best I Ever Had) is a French bistrot with inspiration from the diverse culinary scene of the Big Apple. Aptly situated on the ground floor of the former Paris Stock Exchange, you will find great quality food and a Manhattan vibe: possibly… the best you’ve ever had.

Started in 2008 in Lyon, its Paris locale will be the 6th opening of BIEH, already established in Dijon and soon Marseille. In a business and tourist centered neighborhood, this is a new and original niche address in the imposing Palais Brongniart. Founded and kept running by a French team, catch a glimpse on how the French view the other side of the Atlantic.

With two immense rooms (one for the restaurant, and the other for a bistrot-bar with a total of 180 places), you will find typical 50s style Atlantic decoration – beige bricks vaults, dimmed lights, very comfortable Chesterfield benches, and a terrace with 50 seats towards its southern entrance. BIEH is added to the long list of burger places in Paris, especially in this particular neighbourhood (with Mamie Burger, King Marcel, Blend, Factory & Co, etc.), but is distinguished by its mix between high-quality bistrot and street food concept – a dinner more easily found in Soho than in Paris’ 2nd arrondissement.

A 100% US menu

“Everything is freshly made the same day with fresh produce carefully selected and bought,” explains the warm director of the restaurant. “That’s what allows us to keep our prices low.” The prices are relatively accessible for the neighbourhood.

Their burgers, starting at 13€, are notable for their meat sourced from Limousin cows from central France and buns created specially by a local baker. Burgers also feature grilled vegetables and freshly grated cheese, with hints of bacon, pickles, and homemade sauces. Truly a Franco-American burger through and through.

The hot dog at BIEH is a wakeup call to all the Parisian “US hot dog” imitators, and is worth tasting here. The cheddar is deliciously melted, and the bun also prepared to order. Alas, the menu wouldn’t be complete without other New York classics like the meatball hero, pastrami bagels, BLT sandwichs, Angus T-Bone steak, ribs, fish & chips, and lobster rolls. 

The coleslaw is delicious (truly rare for Paris), and their mashed potatoes are genuine – for a 3€ supplement, you can have similar side dishes available from a long list of accompaniments.

As for their desserts (which we haven’t tested), they have created a reputation for their cheesecake. Or, get a milkshake or a Dr. Pepper for a more diner feel. Explore their menu here.

BIEH succeeds in meeting the high demands for good food (Oh, the French and their gastronomic insistence!) and allows you to take a different voyage to the bubbling streets of Manhattan in Paris. The one flat note we encountered the day we tried BIEH was that the burgers arrived a bit cold.

Another true asset? The servers, wearing a uniform of retro suspenders, truly know about the cuisine, and the plates themselves are generously portioned and delicious.

Imported US beers and service 14 hours a day

A little extra bonus? The prices here give a run for your money – you can find surprisingly low prices in defiance of normally high Parisian costs: rare IPA beers from the US are at 6€ a bottle, a pint of genuine Brooklyn Lager at just 7,5€ (!) (versus 9,5-10€ elsewhere), and classic pints for 6€. (And no, these aren’t happy hour prices).

And that’s not all. BIEH is open from 8 in the morning to 11PM, with last kitchen call at 10:30PM. From an American breakfast, to brunch (starting September 2015), to lunch, ‘afterwork’ (with cocktails and tapas at low prices), and finally to dinner – BIEH offers it all.
