A quiet revolution has been taking place in the world of Parisian pâtisseries…

The iconic macaron – known all over the world as a symbol of French delicacy and refined taste – in all of its lightness and sweetness, may slowly be being surpassed by a surprising contender: the éclair.

Yes, the éclair, the pastry defining many a French childhood, with a light choux base traditionally filled with coffee or chocolate creme, is being reinvented and revitalized with a variety of new recipes all over Paris.

The infinite variety makes éclairs the perfect pastry to adventurously try while all the while satisfying your sweet tooth. Eclairs have become so popular Fauchon has even dedicated one week a year as Eclair Week, where you can make your own creations, or enjoy creative tastes such as an artistic Hokusai Eclair or a colorful Rainbow Eclair.

However, the symbol of the renaissance of the éclair is best represented by Christophe Adam, whose store in the Marais “L’éclair de génie” is an incontestable name in the Parisian pastry scene.

A pastry concept store specializing in éclairs, it redoubles the fervor of joining different ingredients to make an exquisite dessert, complete with incredible presentation. Forget plain coffee and chocolate, come and taste yuzu citron, vanilla pecan, blackcurrant and mascarpone, and much more. Of course, for chocolate lovers, L’éclair de génie offers a gourmet chocolate éclair, with flavors changing monthly. Prices range from around 4-7 euros for these specialty éclairs.
